Baking with Herbs

Macha cookies (Makes 24 cookies):

  • 2 cups all-purpose flour 
  • 1 tablespoon green tea powder (matcha)
  • 1/2 teaspoon baking soda 
  • 1/2 teaspoon salt 
  • 1 cup packed brown sugar
  • 3/4 cup unsalted butter, melted
  • 1/2 cup white sugar 
  • 1 tablespoon vanilla extract 
  • 1 egg
  • 1 egg yolk
  • 1 1/2 cups white chocolate chips

 

Earl Grey Lavender Cupcakes (Makes 30 cupcakes):

  • 1 cup + 1 tbsp milk
  • 4 Earl Grey tea bags
  • 2 tbsp dried lavender
  • 13.5 oz (3 cups) all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • 12 oz unsalted butter, at room temperature
  • 14 oz (2 cups) granulated sugar
  • 6 large eggs, at room temperature
  • 1 tbsp vanilla extract

Earl Grey Lavender Buttercream:

  • ¾ cup water
  • 4 Earl Grey tea bags
  • 1 tbsp dried lavender
  • 21 oz (3 cups) granulated sugar
  • 8 egg whites, at room temperature
  • ½ tsp cream of tartar
  • 18 oz unsalted butter, at cool room temperature
  • 1 tsp vanilla extract
  • ½ tsp salt

 

Coconut Lime Bars (Makes 16-24 bars)

  • ½ cup butter (1 stick)
  • 3 large eggs
  • ½ cup packed light brown sugar
  • 1 and ¾ cups flour
  • 2 teaspoons vanilla extract
  • 2 and ¼ cups shredded sweetened coconut flakes
  • 3 limes, zested

  

Peppermint Brownies

  • 1 cup (2 sticks) butter
  • 2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon peppermint extract
  • 4 large eggs
  • 3/4 cup cocoa (I used dutch processed)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups white chocolate chips
  • 10 large candy canes, crushed

 

Chocolate Chip Raspberry Oatmeal Cookies

  • ½ cup butter, room temperature
  • ½ cup brown sugar, lightly packed
  • ½ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1¼ cups all-purpose flour
  • 1 cup quick cooking oats
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup chocolate chunks (semi-sweet or dark; about 4 oz chopped chocolate/4 sqaures of baking chocolate)
  • 1 cup raspberries
